Because we all love apples eh ? 🙂
Ingredients : 1 kg. Granny Smith apples ; 4 eggs separated ; 10 tbsp sugar + 8 tbsp for meringue + some for apples to taste ; 1 tbsp unsalted butter ; 10 tbsp oil ( veg. ) ; 12 tbsp milk ; 12 tbsp flour mixed with 1 tsp baking powder ; cinnamon to taste ; 1 tsp vanilla extract for the meringue .
Preheat oven at 350 ; oil and dust with flour a 9″ spring baking pan .
On a box shredder shred the peeled and cored apples and then sautee the apples with sugar to taste and cinnamon ; add a spoon of unsalted butter and stir in . Set aside .
In a mixing bowl beat egg yolks and sugar until foamy and then drip oil slowly and you keep whipping , same with milk , spoon by spoon and just as gradually fold in the flour mixture . Pour into the baking pan and bake for only 10 to 15 mins . Set aside .
Whip the egg white with 8 tbsp of sugar into a bowl set over a pot with boiling water fast and just until sugar is melted / egg whites warm ; off the steam , whip on with a hand mixer , add a tsp or so of vanilla extract , whip until the Swiss meringue is nicely peeked .
Layer the apple mixture over the cake in the pan , layer ( or pipe ) the meringue on top , sprinkle some shredded coconut over the top ( optional ) and return to the oven and bake until the meringue is golden .
