Shepherd’s pie

Two ways to make and serve , the traditional casserole pan or deconstructed : for the “deconstructed'” we need a large muffin pan we’ll use to bake puff pastry ‘bowls’ over the back of the pan ( do brush the pastry with eggwash and add a whiff of turmeric to the eggwash ) .

We’ll need : equal parts of ground beef or lamb ( or just beef , optional ) ; separately chopped and set aside : red onions , celery , carrots , red & yellow sweet peppers , scallions , flat leaf parsley : have corn kernels and sweet green peas ready ;

make smooth and creamy mashed potatoes using a hand mixer adding butter , horseradish , sour cream , salt/pepper and diced scallions

make a nice gravy with roux fixed with red wine , brandy , roasted chipollini onions , roasted sliced cremini mushrooms , s/p , chopped fresh thyme and a slurry of ” Knorr” demi glaze ( or real demi if you have it ) and a little rice flour

start cooking : add olive oil to a large pot and when hot add diced red onions , grated fresh garlic to taste and lightly sautee , add the ground meats and brown while sprinkling Montreal steak spice ( not much ) , s/p , Vegeta seasoning , good splash of red wine ; reduce heat and let simmer : meanwhile , in a separate pot boil carrots and celery to really al dente in little amount of water and then add to meat mixture ; add the chopped peppers , corn , sweet peas , parsley and scallions and let it all simmer together for a few minutes

for both serving choices , keep aside some of the boiled carrots , celery , peppers , sweet peas and have them buttered , s/p to use as garnish

in a casserole dish layer your meat mixture , sprinkle some of the garnish veggies over it and then using a piping bag with a rosette tip pipe the mashed potatoes and bake in the oven at 425 until golden brown ; serve with a good ladle of your gravy

for the deconstructed plating , ladle around the plate the yummy gravy , set the puff pastry ‘bowl’ in the middle and ladle the meat mixture , pipe nicely mashed potato on top , sprinkle garnishing veggies all around , top it all maybe with some crispy fried onions or a fresh “salad” of flat leaf parsley/sliced radishes ( watermelon or black radishes would look nice ?? 🙂 )
