When you bake these meatballs the kitchen smells as if you’re baking apple pie 🙂 🙂 ; love them especially glazed in a sauce of sweet & spicy chili sauce to which i add a little ketchup , it just works 🙂
To start , we need at best both turkey breast meat and thighs as thighs will keep them tender and tasty . Peel and core 2-3 apples ( granny smiths ok ) , couple stalks celery , sweet red and white onions , sweet 3 color peppers ( red/yellow/orange ) and fresh chopped scallions and fresh thyme . We need spices : cinnamon ( on the generous side ) , ground cardamom , s/p , Calabrese chili paste ( just a tsp. or so , it shouldn’t end up too spicy ) , about 1/2 cup Thai sweet chili sauce ; also Panko breadcrumbs , 3-4 eggs and i 400 ml can of coconut cream ( 35% cream ok too ) .
Add the minced turkey into a larger bowl , pulse the veggies in a food processor to small mince and add to meat ; add all spices and in a separate smaller bowl mulch the breadcrumbs with the eggs and coconut cream ; add the chopped scallions and thyme and Thai sweet & spicy sauce ; mix everything well together but do make a taste test first ( make a small meatball and cook it and get a taste just in case it needs adjusting for seasonings ) .
Use an ice cream scoop to measure , roll the meatballs and lay them on a parchment padded baking sheet , bake in the oven at 375 for about 25 mins. or until golden and tender to touch .
Let the meatballs cool off a bit before glazing them in a mix of 3 parts Thai sweet & spicy chili sauce and 1 part ketchup ; enjoy them and enjoy the delicious smell 🙂
