Yes , a simple clam chowder becomes glamorous when you sprinkle on a little extra favorite seafood bits and then yes , you also make it gluten free ; am i right ?? 🙂
Ingredients : clam meat ( off shell ) and some clams in shell for garnish ; some personal seafood medley of choice ( optional , for garnish … and joy 🙂 ) ;freshly cooked bacon bits ; fresh off the cob corn kernels ; diced potatoes ( creamers , mini reds or fingerlings … ) ; carrots – sliced , diced sweet onions or pearl onions ; diced roasted peppers ; small diced asparagus ; diced 1-2 hot chili peppers ; minced garlic , ginger and turmeric ; chicken stock ; kefir ; coconut cream ; lemon ; 2 eggs ; rice flour ; fresh diced mint , dill and scallions .
This is actually so easy , so simple to do ; just cook off some bacon strips and turn to bits , cut corn kernels off the cob , add olive oil to a pot and add diced onions , bacon , corn , diced potatoes of choice , diced chili peppers ( skip if spicier is not desired ) , garlic / ginger/turmeric ; once nice and soft add chicken stock , coconut cream , kefir ; let simmer for a few mins. ; drop in clams and if so wanted the seafood pieces and let simmer for a few more mins ( when shrimp turns pink and shelled clams pop open it is all good ) then , aside in a small bowl whisk a couple of eggs with juice from 1 or 2 lemons ( to taste ) and add about 2 tbsp. of rice flour and mix well together ; ladle slowly /gradually some hot broth into the egg mixture while whisking fast and then slowly pour it into the pot and give it a good stir ; add the fresh mint , dill and scallions ………
