Focaccia pie

Always a nice addition to a meal , this focaccia is easy to make and so good .

Ingredients : 3 cups AP or ” pastry pizza… ” flour ; 1 tbsp dry yeast ; 1 tsp salt ; 1 tbsp sugar ; 1 1/2 cups of warm water , 2 eggs ; 2 tbsp olive oil ; roasted garlic cloves ; 1 tbsp sundried tomatoes ; 1 tsp fennel seeds ; chopped herbs such as basil , rosemary , oregano and thyme kept all separately and keep some basil and rosemary for later ; some garnishes such as cheeses ( marble cheddar , mozzarella and provolone ) , roasted red peppers , pitted olives or grape tomatoes …etc. )

In a smaller bowl add warm water and dry yeast , stir a bit and let it aside to bloom to a foam 9 about 10 mins )

In a larger bowl add the flour , make a well in the middle and add the salt , sugar , olive oil , eggs , fennel seeds , sundried tomatoes , chopped herbs ; pour over the liquid foamy yeast and start mixing by hand ; knead it all lightly for a few mins. until it starts being less sticky to fingers ; cover the bowl well with plastic wrap and let rise in a warm and draft free spot ( near the heating oven should be ok ) for at least 30 mins or until well doubled in volume .

Oil well a spring cake pan and sprinkle a little chopped basil on the bottom ; with oily hands get the dough in the pan , sprinkle some chopped rosemary on top , add some favorite toppings like cheeses , olives , roasted peppers , grape tomatoes …etc. , have fun 🙂

Bake in a preheated oven at 400 for about 20 to 30 mins or until puffy and golden on top ; open the pan spring and let focaccia cool of a bit ; Buon appetito 🙂
