What can be most comforting than a deliciously hearty soup on a cool, rainy day ,,,,or a snowy day eh ?? This one soup is a favorite of mine since my mama used to make it for us growing up 🙂 ; so let’s us start with cross scoring a nice smoked pork hawk and start boiling it by itself for at least 45 mins. to an hr. ; discard the boiling water in the pot , add fresh water and restart boiling but now turn the heat to a simmer and let it boil until very tender and falling off the bone ; remove from pot , discard the bone and return chunks to pot and let simmer ; next , add bite sized chopped vegetables such as onion , carrot , parsnip , celery root and kohlrabi ; let simmer until veggies just tender , add beans ( red and white kidney … or your faves ) , add diced peppers ( red , yellow , orange ) , diced scallions and fresh dill , add some fresh kale or baby spinach for some greens ; season slowly pinch by pinch with salt /pepper/dry savory and Vegeta seasoning , especially careful with all since pork hawk is already quite salty and flavorful ; and we are done , grab a bowl and just enjoy a soup that is a whole meal 🙂
